One of the most loved Indian dessert is Ras Malai. The soft cheese balls drenched in thick kesar milk or nectarous chaashni is mouth watering. It adds a sweet flavor to every moment we spend with our near and dear ones. If you wish to serve it to your guests or gift it to someone special, you can easily get it from any sweet shop. But, Ras Malai made at home from your own hands would have a different taste altogether. Moreover, you would not have to stand for hours in the kitchen to prepare this luscious recipe. So, don your apron and be in your best spirits, because only then the sweetness will be reflected in the dish.

Ras Malai
Ingredients:
1 1/2 l Milk
1 teaspoonful Refined Wheat Flour
2-3 tablespoon lemon juice
Sugar to taste
1 cup Water
1/4 teaspoon Cardamom Powder
1/4 teaspoon Kesar
Blanched Almonds
Blanched Pista
Procedure:
Boil 1/2 liter of milk in a pan and add lemon juice to it. Stir until the the milk turns into cheese and water. Separate water from the cheese and wash the solid part thoroughly. Add to this cheese the refined flour and knead. Make small balls out of the dough. Keep them aside. Now boil water in a pan and add sugar to it. Boil till a thick solution is made and then put the cheese balls into it. Keep the flame low. In a separate pan pour milk and cook till it is thick and sauce like. add sugar and cardamom powder and kesar to it. Stir well. Add the sweetened cheese balls, which must have become fluffy into the milky sauce. Garnish it with blanched almonds, pista and strings of kesar. Serve after refrigerating it.
