Lapsee is a famous West Indian recipe loved by people during the festival of Diwali. You can make Lapsi in two different ways. One is a sweet dish and another is for the spice lovers. We provide you with the recipes of both the delicacies.

Sweet Lapsee
Ingredients:
1 cup Broken Wheat
3/4 Cup sugar
4-5 Almonds
20 Raisins
Cardamom Powder
3/4 cup Ghee
2 1/2 cup Hot Water
Procedure:
Roast the wheat flour in a pan with ghee in it. Cook till it turns light brown. Add 2 cups of water and cook. Let the water evaporate completely and wheat to become soft. Now mix in it sugar, ghee and remaining hot water and cook on a simmered flame for 10 minutes. As soon as you see ghee bubbling out of it, your Lapsee is ready. Sprinkle over it blanched almonds and pista.
Spicy Vegetable Lapsee
Ingredients:
1 1/2 cup lapsi
1/2 Teaspoon mustard Seeds
1/2 Teaspoon cumin seeds
2 Red Chillies
A pinch of Asafoetida (hing)
1 large tomato, chopped
1/2 tablespoon turmeric powder
1 onion, chopped
1 tablespoonful Garam Masala
1/2 teaspoon garlic paste
1/2 teaspoon Chili Powder
Salt to taste
1 cup of chopped vegetables of your choice
Chopped Coriander to garnish
Procedure:
Fry lapsee without oil in a pan till it turns light and keep it aside. Heat oil in a pan and add mustard seeds and cumin seeds. As you hear the crackling sound, add hing to it. Pour red chilies and onion in the pan and heat them till they turn pinkish in color. Now put tomato, garlic paste and cook again. After 3-4 minutes, add all the dry spices into the pan and then add chopped vegetables. Now mix this with the fried lapsee prepared earlier. Cook in a pressure cooker along with 3 cups of water. Lastly, garnish it with the chopped coriander leaves and serve hot.
